The Domaine is situated on prime wine growing terrain, which is exceptional not only for the quality of its soil, but also for the depth of this soil. The following grapes, or cépages, are cultivated:
- Cinsault, which provides a delicate, pleasant and drinkable rosé which perfectly complements any summertime meal (salads, grilled meats, ...). Our 2006 Cinsault is sold at 4€ per bottle, and can also be bought in 5 litre bibs (cardboard boxes containing an aluminium bag which allows the wine to stay fresh well after it has been opened) at 13€.
- Grenache, which undergoes the saignée process**, yields a more fruity, refreshing and deeply coloured rosé, which goes very nicely with starters, Provençal cuisine, pizzas, grilled meats, ... Our 2005 Grenache rosé won two awards at different winemaking competitions: the Gold Crown at the Côteaux d'Aix competition, and the Silver Medal at a competition for Independent Winegrowers. The 2006 Grenache rosé is only available per bottle at 5€.
- Roll, or Vermentino, makes for a dry, fresh tasting white wine with an aromatic nose which can be enjoyed with oysters, fish, seafood or why not as an apéritif? Domaine Sainte Philomène's white wine is sold by the bottle at 4€50.
- Our red wine is a mix of Cabernet, Sauvignon and Syrah - a rich wine with powerful tanins which was produced by our predecessors in 2003, and goes down excellently with game, stews, roasted meats, ... As with our Cinsault, the 2003 red is available by the bottle at 4€, and by bib at 12€.
**A winemaking process which involves bleeding off a portion of red wine after only a short period of contact between the grape juice and the grape skins to make rosé, as opposed to red, wine.
